Initially sceptical about how the stout would influence the flavour, I decided to treat my family to a chocolate Guinness cake to mark the occasion. Following the renowned recipe from television chef Nigella Lawson, featured in her celebrated cookbook Feast, the result was nothing short of spectacular. Chocolate Guinness Cake Recipe

Cake Ingredients

  • 250 millilitres Guinness
  • 250 grams unsalted butter
  • 75 grams cocoa powder
  • 400 grams caster sugar
  • 150 millilitres sour cream
  • 2 large eggs
  • 2½ teaspoons vanilla extract
  • 275 grams plain flour
  • 2½ teaspoons bicarbonate of soda

Icing Ingredients

  • 300 grams cream cheese
  • 150 grams icing sugar
  • 2 teaspoons cornflour
  • 125 millilitres double cream or whipping cream

Method

  1. Preheat the oven to gas mark 4, 180°C, 160°C Fan, or 350°F. Butter and line a 23cm or 9-inch springform tin.
  2. Pour the Guinness into a large saucepan and add the butter. Heat gently until the butter has completely melted.
  3. Remove from the heat and whisk in the cocoa powder and caster sugar until smooth.
  4. In a separate bowl, beat the sour cream with the eggs and vanilla extract. Pour this mixture into the saucepan.
  5. Gradually whisk in the plain flour and bicarbonate of soda until a smooth batter forms.
  6. Pour the cake batter into the prepared tin and bake for 45 minutes to one hour. Allow to cool completely in the tin.
  7. For the icing, lightly whip the cream cheese until smooth. Sieve over the icing sugar and cornflour, then beat to combine.
  8. If using, add the double cream or whipping cream. For whipping cream, whisk until soft peaks form. Add a couple of spoonfuls to the cream cheese mixture, combine, then gently fold in the remainder.
  9. Ice the top of the cooled black cake to resemble the frothy head of a Guinness pint.
