The concept was born from Herman's admiration for the classic Belgian frites culture. He told The Times about the inspiration, noting the ubiquitous homemade chips served with stew and mayonnaise. 'It is in their DNA,' he said. Determined to elevate this staple, Herman embarked on a meticulous process, testing countless potato varieties and recipes to perfect his gourmet version.

The result is a menu dedicated almost entirely to chips, albeit in spectacularly adorned forms. The first UK outlet is located at 34 Old Compton Street in Soho, London. Diners can explore a selection of 'Frites Specials', each served in a tray and starting from £8.95, with prices going up to £14.50.

A Menu of Decadent Toppings and Late-Night Hours

The offerings are far from ordinary. The menu features four signature creations:

  • Fries with Parmesan and basil, accompanied by a Flemish beef stew.
  • The Sea Nori fries.

The Soho establishment caters to late-night cravings, operating until 3am from Wednesday to Saturday, and closing at midnight from Sunday to Tuesday. The experience is complemented by a drinks menu featuring beer, espresso martinis, margaritas, and champagne.
