Mum Creates Filling Family Meal for Less Than £5, Recovers from Supermarket Slip-Up
Preparing nutritious and satisfying meals for a family while adhering to a tight budget often presents a significant challenge, yet one resourceful mother has proven it is entirely possible with a little creativity and savvy shopping. Jenine Kayley, a social media influencer renowned for her cost-effective culinary advice, embarked on a mission to Lidl with only a five-pound note, successfully purchasing ingredients to whip up a delicious dinner for her household of four.
In a TikTok video that has captivated her 308,000 followers, Jenine documented her supermarket trip and subsequent cooking process, highlighting both her strategic approach and an amusing oversight. The video opens with her enthusiastic declaration: "Let's make a meal to feed a family of four for a fiver, and today we're hitting Lidl. Let's see what we can find."
Budget Shopping Breakdown at Lidl
Jenine meticulously selected items totalling £4.87, demonstrating that frugality does not necessitate sacrificing flavour or quality. Her shopping list included:
- Spanish chorizo: £1.89
- Plumb tomatoes: 47p
- Loose red pepper: 67p
- Bag of long grain rice: 52p
- Three red onions: 95p
- One bulb of loose garlic: 37p
Upon returning home, she set to work preparing a one-pot chorizo rice dish, a hearty and straightforward recipe ideal for busy families. She began by thinly slicing the chorizo, advising viewers: "Try not to cut the pieces too thick. Cut them nice and thin, and then when you cut them in half you've got a lot more to distribute throughout the meal."
Cooking Process and Unexpected Hurdle
Jenine cooked the chorizo in a pan until it began to crisp, then added diced onion and pepper, followed by garlic. She humorously noted using a food processor for the garlic due to a broken press, emphasising: "When it comes down to garlic, add as much or as little as you want because, honestly, I don't think there's ever such thing as too much garlic."
After seasoning the mixture with smoked paprika, chili flakes, salt, and pepper, she encountered her mistake: she had accidentally purchased plumb tomatoes instead of chopped tomatoes. Unfazed, she quickly resolved the issue by processing the tomatoes in her food processor before adding them to the pan. She pointed out that chopped tomatoes would have cost 49p, keeping the total well within her £5 limit.
Jenine then incorporated 750ml of water and the rice, suggesting adding a stock cube if available. She simmered the dish covered for approximately 15 minutes, stirring occasionally until the rice was tender. Presenting the finished meal, she sampled a portion and exclaimed: "That is really good."
