Demi Lovato has opened up about her journey of recovery from an eating disorder, describing how learning to cook has become a monumental achievement in her healing process. The singer and former Disney star made these heartfelt admissions while promoting her upcoming cookbook at a special event with Eli Rallo held at the 92nd Street Y in New York on Tuesday.
A Transformative Journey with Food
The cookbook, titled One Plate At A Time: Recipes For Finding Freedom With Food, is scheduled for release on March 31. Lovato, who has publicly battled bulimia for many years, explained that her relationship with cooking began to shift significantly about five years into her recovery journey, when she was 30 years old.
'I think this whole book is celebratory because it's a celebration of how far I've come,' Lovato shared with the audience. 'I used to step foot into a grocery store and break down into tears because I was so overwhelmed by all of the food.'
From Fear to Freedom in the Kitchen
The singer contrasted her past struggles with her current confidence, stating: 'And now I'm not only going into grocery stores and shopping myself, but I'm also cooking the meals that I'm making, and that's a huge win for me.'
Lovato also revealed how she previously avoided many enjoyable foods during her darkest periods. 'There was a time in my life where I wouldn't celebrate my birthdays with cakes, and so to have a birthday cake recipe in my cookbook is so meaningful and has been so rewarding,' she confessed.
A Turning Point with Friends
The pop star described a pivotal moment that made her realize how far she had progressed in her recovery. A dinner gathering with friends became an epiphany about the joy cooking could bring.
'We turned it into this spaghetti squash salad. That was the first recipe that I cooked with friends where I was like, "Wow, this is actually really fun,"' Lovato recalled. 'When I actually stepped foot into the kitchen and had so much joy come from it, and I was proud of what I made.'
Helping Others Through Shared Experience
Lovato expressed her desire to use her cookbook as a tool to assist others facing similar challenges with food and cooking anxiety.
'I wanted to create a cookbook that was for people who may have had disordered eating in the past or are just intimidated to step foot into the kitchen for the first time,' she explained. 'It's just about getting in the kitchen and getting comfortable around cooking, and that will set you up for success later down the road with more recipes.'
The Cookbook's Personal Significance
In previous statements about the project, Lovato emphasized the deeply personal nature of the cookbook. The singer, known for her past friendships with celebrities like Selena Gomez and former relationship with Joe Jonas, described the collection as 'filled with simple, comforting recipes that have allowed me to reconnect with myself and find both freedom and joy in my kitchen – feelings I never thought I could experience.'
She further elaborated: 'It has allowed me to see cooking as an act of love and kindness to myself and those in my life, and I hope this book can bring that same feeling into your home too.'

The cookbook features more than 80 recipes that trace Lovato's evolving relationship with food after years of struggling with bulimia. Notable dishes include:

This revelation about cooking as recovery comes amid reports that Lovato has lost approximately 50 pounds over the past year through dietary changes and an adjusted exercise routine. However, her focus during the New York event remained firmly on the psychological and emotional healing she has achieved through developing a healthier relationship with food preparation and consumption.
