Celebrity chef Gordon Ramsay has unveiled a straightforward technique to achieve the perfect steak, centred around a critical 15-minute rule. The Kitchen Nightmares and Hell's Kitchen star made the revelation during a recent appearance on BBC Radio 2's Scott Mills Breakfast Show, where he offered expert advice to a listener seeking culinary guidance.
The Listener's Dilemma and Ramsay's Response
During the broadcast on Wednesday, February 18, a listener named Milly from Portrush posed a question about avoiding tough steak. As a butcher's daughter, she had experimented with timing and the thumb-pressing method without success, prompting her to request a foolproof approach for cooking an ideal sirloin.
Ramsay's Step-by-Step Guide
Gordon Ramsay responded with a detailed, step-by-step process that begins well before the steak hits the pan. He emphasised the importance of preparation and patience, stating, "Right, Milly in Portrush, first of all, take that out of the fridge literally 15 minutes before you cook it, okay? Nicely season it, a touch of olive oil, a little bit of garlic, rosemary."
He continued, "And then the hot pan needs to be absolutely screaming. You need to sear that; once it's seared, base it, and let it rest. Do not slice it piping hot. Slicing it piping hot is gonna bleed it dry. Let your steak rest, girl. Please! Come on; your dad should have taught you that, as a butcher."
The Science Behind the Method
Ramsay's advice highlights two key principles in steak cookery: temperature equilibrium and resting. Removing the steak from the refrigerator 15 minutes prior to cooking allows it to reach room temperature, ensuring more even cooking and preventing a cold centre. The resting period after searing is crucial, as it lets the juices redistribute throughout the meat, resulting in a tender, flavourful steak rather than a dry, tough one.
Context: Ramsay's New Netflix Series
This culinary tip coincides with the release of Ramsay's new six-part Netflix docuseries, Being Gordon Ramsay, which premiered on the same day as his radio appearance. The series follows the father-of-six as he balances family life, his business empire, and a new project involving five culinary concepts within London's 278-metre 22 Bishopsgate building.
Personal Reflections in the Series
In Being Gordon Ramsay, the chef opens up about his challenging relationship with his father, which has influenced his parenting style. He recalled, "I, sadly, had a torrid relationship with my father. My father called me a snob once. And I said, 'No, definitely not a snob. I just want to get out of the s*** mess I was born in.'"
Ramsay also discussed witnessing his father's struggles with alcoholism, noting, "It's hard, isn't it, when someone's an alcoholic? It's very hard to relate to that, because you're just... you're nervous. You're worried about, you know, hitting the end of the bottle and seeing that bottle of Bacardi disappear, because you know what happens at the end of that."
