How the Tin Foil Hack Works

Dan explained: "If you've ever wondered 'Does wrapping lettuce in foil keep it fresh?' you have to try this trick. It can keep romaine lettuce crisp for as long as 30 days. Simply wrap individual heads or hearts tightly in aluminium foil. Remove as many crispy leaves as you need for a recipe, and re-bundle the remaining lettuce."

Tin foil helps the lettuce preserve more moisture while still allowing sufficient ventilation to prevent condensation, which can create a humid atmosphere that promotes mould growth. It maintains lettuce hydration, preventing it from drying out, while acting as a shield against mould spores, bacteria, and ethylene gas present in the fridge. Ethylene gas, naturally released by some fruits and vegetables to aid ripening, can cause lettuce to deteriorate prematurely when excessive amounts accumulate in an enclosed space.

Proper Storage Method for Fresh Lettuce

Begin by rinsing the lettuce leaves under cold water to remove dirt and bacteria that can speed up deterioration. Next, dry the lettuce using a salad spinner or pat it down with a clean tea towel, ensuring no water droplets remain on the leaves. Lay out tin foil, place some kitchen paper on top, then wrap the lettuce loosely in the foil.

Lettuce naturally gives off considerable moisture, and the kitchen paper helps absorb extra liquid, maintaining optimal humidity levels to prevent drying out or mould development. Keep the wrapped lettuce in the crisper drawer, where it should remain fresh for at least a month.

Reviving Wilting Lettuce

If the lettuce begins to wilt, there is a simple way to rescue it. Dan advised: "Before you throw out that sad head, try rescuing it with an ice-water bath. Completely submerge the lettuce, leave it in the water for five minutes, and then pat dry. This is often enough to shock the leaves back into shape so that you can use the lettuce for a few more dishes."
