Panera Bread is adding lobster to its menu once again, but only at select restaurants in the Northeast, marking the unofficial start of summer. The limited-time offerings include the chain's lobster roll and lobster macaroni and cheese, both featuring claw and knuckle lobster meat, as reported by Parade.
Lobster Menu Details
The lobster macaroni and cheese is priced at $12.99 plus tax and combines Panera's standard Vermont white cheddar macaroni and cheese with seasoned panko breadcrumbs and buttered lobster meat. The lobster roll, retailing at $23.99 plus tax, features lobster meat tossed in a lemon tarragon mayonnaise dressing served on a traditional New England roll. Due to regional sourcing, both items are restricted to participating Northeast franchises.
Strategic Restructuring
The regional launch comes as the chain adjusts its menu under a broader corporate restructuring. Over the last year, the company has worked to overhaul its core offerings, lower prices on select items and open new U.S. locations, according to official corporate statements detailing its “Panera RISE” initiative.
Panera Bread operates more than 2,200 bakery-cafes across 48 states and Washington, D.C. The brand, which helped pioneer the fast-casual restaurant category in the 90s, is using this RISE initiative to clear $7 billion in sales by 2028 in an effort to turn around its recent earnings slump, as reported by The Independent.
Menu Overhaul
The temporary return of the premium seafood items follows a massive restructuring of the chain's core menu, which initially rolled out in April 2024, according to Tasting Table. That overhaul consolidated the brand's offerings around larger portions of its traditional staples: soups, salads, sandwiches, and macaroni and cheese.
Panera Bread’s seasonal lobster menu items are available at select locations in the Northeast for a limited time starting May 20. The seafood return coincides with the chain's broader ‘Panera RISE’ initiative, a restructuring effort aimed at reversing a recent earnings slump and hitting massive sales goals by 2028.
