Chef Carina of Recipes by Carina advocates using carbonated lemonade—such as Sprite or 7UP—as the secret ingredient. She assures that the finished scones do not taste of lemon. Instead, the carbonation combined with self-raising flour and cream produces exceptionally light and airy scones.
The Three-Ingredient Method
Unlike traditional scones that involve rubbing cold butter into flour, this streamlined approach relies on a different mechanism. Chef Carina explained, “It might seem like magic, but mixed with just self-rising flour and cream, these three ingredients create the most delicious light and fluffy scones and also the easiest scones you will ever make.” The cream functions similarly to butter by coating the flour, while the fizzy lemonade introduces carbon dioxide bubbles that expand during baking, yielding a tender crumb.
Ingredient Substitutions
If carbonated lemonade is unavailable, bakers can substitute it with sparkling water plus a few tablespoons of sugar. Still water or still lemonade should never be used, as the scones rely on carbonation to rise properly. For the cream component, full-fat Greek yoghurt or buttermilk can replace double cream, though the scones will be less rich due to the lower fat content.

The recipe yields 12 scones. Ingredients: 500g self-raising flour (or plain flour with baking powder), 300ml double cream, and 300ml carbonated lemonade.
