  • One whole cabbage
  • One large onion
  • One carrot
  • One red chili pepper
  • Three cloves of garlic
  • A bunch of spring onions
  • Four large eggs
  • Two tablespoons of butter
  • Two tablespoons of soy sauce
  • One tablespoon of dark soy sauce

Method

  1. Chop the cabbage into bite-sized squares. Place the pieces in a large bowl, cover with water, and leave them to soak while you prepare the remaining ingredients.
  2. Beat four eggs with a pinch of salt. Melt one tablespoon of butter in a pan over medium heat. Pour in the eggs and stir continuously to create a soft, scrambled omelette.
  3. Once cooked but still moist, break the omelette into small pieces, remove them from the pan, and set aside.
  4. In the same pan, melt half a tablespoon of butter and add the sliced onion. Sauté until the onion begins to soften. Add the shredded carrot and sliced red chili and continue to fry until the vegetables are tender.
  5. Push the vegetables to one side, melt another half tablespoon of butter in the centre, and add the minced garlic. Sauté for about a minute until aromatic. Drain the water from the cabbage and tip it into the pan. Stir-fry all the vegetables together on high heat for several minutes until the cabbage has softened.
  6. Stir in the chopped spring onions for freshness. Pour in both types of soy sauce and combine thoroughly to ensure everything is evenly coated. Finally, return the cooked egg pieces to the pan. Toss everything together for a further minute before serving.
