Ingredients:
- Two tablespoons of olive oil
- Two large onions, sliced lengthways into wedges
- Two red peppers, deseeded and cut into large dice
- Two garlic cloves, finely chopped
- One tablespoon of chopped fresh thyme leaves
- 500g of baby new potatoes, unpeeled and halved
- Twelve sausages, pricked lightly with a fork
- 200ml of white wine (or stock as an alternative)
- Salt and freshly ground black pepper to taste
Method:
- Begin by preheating your oven to 220°C (200°C for fan ovens or Gas Mark 7).
- Place all the ingredients, except for the wine or stock, into a large, resealable freezer bag. Seal the bag securely and shake vigorously to ensure everything is evenly coated with the oil and seasonings. Alternatively, you can combine the ingredients in a large bowl and toss them thoroughly.
- Transfer the coated ingredients into a spacious roasting tin, arranging them in a single, even layer. Take care not to let the vegetables completely cover the sausages to allow for even browning.
- Season generously with salt and pepper, then roast in the preheated oven for approximately 30 to 35 minutes, or until the contents turn a lovely golden brown.

- Return the tray to the oven for a further 20 minutes, or until everything is nicely browned, the sausages are fully cooked through, and the potatoes are tender.
