Rotisserie Chicken Salad Wraps: A Nutritious and Quick Lunch Option
Cookbook author Lauren Chambers has introduced a recipe for a fast, high-protein lunch that utilises crisp romaine lettuce leaves to hold a delicious chopped chicken salad. This dish combines the convenience of rotisserie chicken with fresh ingredients like grapes and pecans, offering a balanced and satisfying meal.
Versatile and Easy-to-Make Recipe
Lauren Chambers explains that she prepares these wraps frequently on weekdays due to their simplicity, flavour, and protein content. The salad is also rich in fresh raw fruits and vegetables, making it a wholesome choice. While the lettuce wrap version is popular, the salad can alternatively be used as a spread for gluten-free crackers or as a filling for toasted gluten-free bread, providing flexibility for different dietary preferences.
