Fortitude Bakehouse: A Hidden London Gem Serving Heavenly Beignets
As a seasoned explorer of London's culinary landscape, I've sampled countless bakeries across the capital. Yet one establishment, repeatedly crowned among London's finest, had somehow eluded me for years. Fortitude Bakehouse, nestled along a tranquil side street near Russell Square in the West End, has earned recognition as one of Britain's top bakeries by the prestigious Great British Food Awards.
A Wholesome Escape from London's Bustle
Truth be told, I deliberately avoided seeking out Fortitude Bakehouse initially. I was apprehensive it wouldn't live up to the considerable hype, worried it was merely another viral hotspot that influencers gushed about across social media. Having been disappointed far too often by such "recommendations," I approached with caution. However, a bakery doesn't rack up awards without delivering exceptional quality.
Tucked away on a charming, almost Victorian-looking street far from Bloomsbury's hustle and bustle, Fortitude genuinely felt as though time had rewound. The bakery, nestled within what appears to be a converted stable, exuded pure "wholesomeness," with benches positioned outside allowing ravenous patrons to devour their purchases on the cobbled ground.
An Overwhelming Array of Sweet and Savoury Delights
Unlike certain bakeries that can appear rather sparse, Fortitude boasts row after row of sweet and savoury delights. The bakery proudly showcases everything, offering a window into the dedication poured into the magnificent treats glistening behind the counter. As somebody perpetually caught in indecision, choosing between cinnamon buns and morning buns, pain Suisse and Danish pastries proved agonising.
There's simply an overwhelming amount on offer, and I was determined not to make the wrong choice. Though this does mean there's plenty of reason to pop back and devour my way through the entire selection. You simply cannot visit Fortitude without grabbing one of its renowned beignets, which are the establishment's signature creation.
The Beignet Experience: Divine but Slightly Skewed
During my visit, strawberry and vanilla beignets were available. Previous beignet flavour pairings have featured innovative combinations like key lime pie, peach jam, vanilla and meringue, plus mocha cream and cherry jam. Fortitude certainly understands the art of doughnut-making; their beignets are light and addictive without feeling overly indulgent.
In my opinion, the cream-to-jam ratio felt slightly skewed. I found myself hunting for the strawberry beneath towering peaks of airy cream. When I finally managed a proper taste of strawberry jam, it vanished far too quickly. The cream served as a gentle palate refresher, but I wished for more bold fruitiness.
Perfect Pastry Pairings and Seasonal Surprises
To balance out my cream-laden beignet, I selected a croissant-style pastry filled with apple, alongside a matcha and pistachio frangipane. This pastry served as the ideal contrast to the beignet. Transitioning from soft, cloud-like dough to crisp, buttery, impeccably baked pastry offered a delightful shift in texture and flavour.
The apple element delivered almost exactly what you'd hope for from a crumble, without tipping into cloying sweetness. Its tartness is gently balanced by the subtle sweetness of the matcha and pistachio frangipane - an ingredient I'd initially been wary of. Thankfully, there wasn't a hint of that grassy matcha flavour creeping through to spoil the pastry.
An unforeseen treat during my visit proved to be their seasonal beverages. Having scoped out their drinks selection beforehand, I discovered the perfect substitute for my lunchtime caffeine fix: a peanut caramel iced latte. Fortitude crafts its own peanut milk specifically for this drink, which sounds every bit as painstaking as nailing those laminations in their pastries.
A Revelatory Culinary Discovery
The coffee went down so smoothly that the cup was already on its way to the bin within five minutes. It can only be characterised as pure energy in liquid form. Every element of my order hit different notes of sweetness, creating a harmonious symphony of flavours.
I'm kicking myself for not making the trip to Fortitude Bakehouse earlier, as I've now realised what's been absent from my existence. This modest neighbourhood bakery nestled in the city centre demonstrates that Londoners genuinely know their stuff when it comes to baking. You're guaranteed an abundance of options at Fortitude, and I'm confident that with each visit, there'll be fresh delights to sample.
Fortitude Bakehouse represents an absolute paradise for bakery enthusiasts, offering a biblical experience that transcends ordinary pastry consumption. The establishment has built its reputation not just on signature beignets but on an entire philosophy of artisanal baking that deserves every accolade it receives.
